This video will show you another method in cooking estofadong baboy. I called it probinsya style because it is a recipe from one of the provinces in the Philippines.
It can be mistaken as pork humba because of the similarities with some ingredients. However, it has its own unique flavor that gives it an identity.
Here are the ingredients:
2 lbs pork shoulder (kasim), cubed
5 saba bananas, cut in half
½ cup brown sugar
8 ounces pineapple juice
6 tablespoons soy sauce
4 dried laurel leaves
1 star anise
1 onion, chopped
5 cloves garlic, chopped
Salt and ground black pepper to taste
1 cup cooking oil
